Back in April, Rob had a conference in DC. Well we always like to extend it out so he can have a little vacation before he’s at work at the conference. Well, we got a crazy idea to start our trip in Boston. Being that Rob is a huge baseball fan, he couldn’t pass up an opportunity to see the Red Sox. It worked out for us to fly into Boston and spend a little less than 24 hours there before venturing towards the DC area. We flew into Boston Logan International Airport late Friday night, got to our hotel…

Recently when I made some homemade dough in the bread machine, I had some dough left over. I didn’t want to waste it so Drew and I decided to try our hand at making some Mini Churros. They turned out great, so I’m afraid every time I make homemade dough we’re going to find a way to have some left over dough! If you don’t have any homemade dough, this would work great with refrigerated croissants or biscuits as well. These are definitely going on my menu for Cinco De Mayo! Servings:6-8 Prep Time: 5 minutes Cooking Time: 15 minutes…

Cinco De Mayo is just around the corner, so I’m rolling out a few Mexican recipes for you to consider for your Cinco De Mayo menu. My family doesn’t like casseroles, so I came up with the fancy name of Enchilada Stack, because it’s kinda like a Mexican Lasagna. I love everything about this dish and I think you will too! How can you not love beef, tortillas, and cheese stacked up? Yum!! Servings: 6-8 Prep Time: 15 minutes Cooking Time: 30 minutes Ingredients: 12 small tortillas cooking spray 1 tbs. olive oil 1 small onion, chopped 1 lb. ground…

How are you enjoying Spring? Has it started raining a lot where you are? We haven’t had a ton of rain, but I know North Alabama has had an abundance of rain. With April I expect to see lots more overcast, gloomy day and lots of rain puddles. I love this quote about from Dolly Parton about rain and rainbows. The way I see it, if you want the rainbow, you gotta put up with the rain. ~Dolly Parton Here are the 5 scriptures I plan to memorize for April… I will send rain on your land in its season,…

We woke up before the alarm again. We didn’t have to be on the pier as early for our excursion as the last couple of days. We watched from our cabin as another cruise ship came in which ended up being Celebrity Eclipse. There was another Thompson ship at port already. We got breakfast in the Mermaid Grill, gathered our stuff, and headed off the ship to the post office. We had to wait in a long line to get stamps. Then, we walked around the capital city of Castries. We stopped at a grocery store and looked around. That…

This post was sponsored by The Women Bloggers, LLC and #SoapBoxInfluence. The opinions are entirely mine except those reported to me by my coworkers. A special thanks to the Kendal King Group creators of #HummusMadeEasy Campaign. In today’s world, life is go-go-go! More is expected of us in less time which causes us more stress. After work, I’m running from soccer fields to scout meetings to church events most every night. Getting dinner on the table and providing healthier snacks for my family always seems to be last on my to-do list. I am always looking for easier ways to…

Over Spring Break, we headed down to Rob’s grandmother’s house in Spring Hill, Florida for a few days. It was a 2 fold trip; partly to visit family and partly to see some spring training games sing Rob’s grandparents live in close proximity to many of the spring training venues. After the game in Clearwater, we stopped at the beach for a little while. The boys brought along the soccer ball and played because the water was pretty cold. It was a beautiful sunset though. Rob’s uncle Mike, recently joined the country band Soul Circus Cowboys as their bass player.…

For the last few months, Alex has been going through the confirmation at church. For those that are unfamiliar, in the Methodism, parents bring their babies usually in the first 6 months of life to be baptized. Then, in 6th grade the children go through a 6-8 week class that’s taught either during Sunday school or another allotted time. Alex had homework every night that was supposed to be completed along side parents. Confirmation classes teach the child Methodism and what we believe. Their was lots of scripture reading and thought provoking discussion questions we had to go through each…

One of the biggest things in my daily life I struggle with is knowing what to cook for dinner. I think for most busy folks we’re constantly on the go and meal planning is something that gets pushed aside. I’ve had a few stretches where I’ve done a good job with it, but I get burnt out with thinking through it and making a grocery list. I know have lot of friends in the same boat. They hate when the dinner bell is ringing and they are still trying to figure out what they can throw together based on the…

Over Spring Break, we headed down Florida for a few Spring Training baseball games. Since we have family that lives in close proximity to many of the parks, it’s nice to have a free place to stay and take day trips to see different teams. Philadelphia Phillies Bright House Field Opened in 2004 Capacity: 8,500 Clearwater, FL The Phillies spring training facility is Bright House Field located right off Hwy 19. There a re a few small parking lots around the stadium, but most of those spots are restricted. You will find that most people park in the grassy…

This month I was happy about: that something miraculous happened and now my blogs are working normally. *fingers crossed* This year I’m going to rate the books & movies. Here’s my rating system: ♥ ♥ = Love it! A must read/see! ♥ = Really good! Highly recommend. ✓ ✓ = Good, not great ✓ = Not much to talk about X = Awful. Total waste of time Movies I watched were: Flight – X – It’s rated high, but we were totally mislead by the reviews. This is a move about addiction and very little of it is about the…

As busy Moms, we find ourselves often scrambling around trying to whip dinner together. These roll-up recipes are such an easy answer to hectic evenings. Every Sunday, I throw the ingredients for pizza dough in the oven, so throughout the week I have it ready for homemade pizza or these easy roll-ups. If you don’t have a bread maker just get some refrigerated dough, which is just as good and easy. I like these because they can be made for breakfast ahead of time. And for those of us who like dinner for breakfast, this is a great option! Servings:…

Lasagna has been one of those dishes that I have struggled with and finally quit trying. Drew gave me a cookbook for Christmas called Gooseberry Patch 5 Ingredient Family Favorites and it has the recipe in there, so I decided to give it a try again. I did have to improvise, because I didn’t have any pasta sauce on hand. I am so glad I decided to give Lasagna! It turned out amazing. I’m not sure what my hang up was before, but whatever it was it seems this recipe resolved it. I’m curious to know what dishes you avoid…

I am a list lover. I love making lists of all kinds. I thought it would be fun to have a running list of recipes that I want to make. This way when I’m looking for a recipe to fill a spot on my weekly menu, I can refer to this list for ideas. I will add a link to them as I complete them. So what recipes are on your list to make? Appetizers Mozzarella Cheese sticks – I’ve made these, but didn’t document. Desserts Chocolate cake roll Donuts Gingerbread cookies Texas Sheet Cake Pumpkin chocolate chip cookies or…

Family Friday A couple weeks ago, my heart cringed with angst as I took pictures of this handsome young man and his beautiful girlfriend before releasing them into the jaws of the Junior/Senior right of passage called PROM. In the back of my mind, I feel like it was just a couple years ago that was me going to prom. Anyway, the plan for Drew and Caitlyn was to meet over at a friends house with their group for dinner before going over the Auburn Hotel and Conference Center for the main event. I offered to meet up with them…

As a busy mom who works full-time, I’m always trying to come up with new recipes that are quick and easy. My family loves Poppy Seed Chicken and Jalapeno Popper Chicken, so I’ve been thinking of similar recipes. This Buffalo Chicken Casserole is so good and can be ready to eat in under 40 minutes. How can you not love that? Servings: 8 Prep Time: 5 minutes Cooking Time: 30 minutes Ingredients: 2 cups cooked and diced chicken 2 tbs. garlic powder 1 cup Buffalo Sauce 2 stalks of celery, chopped 1 (10.75 oz) can cream of chicken soup 1…

Looking for a way to get crunchier chicken fingers? These Cheez-It Breaded Chicken Fingers are so easy to make and are truly delicious. On Day 4 of our Florida tour, we woke up from our restful night at the Hotel Indigo got packed up and got ready to site-see the area and then, head further south. While we waited on our car to be brought up from the valet, Drew decided he wanted to climb the large Mangrove tree across the street from our hotel. Here he is after he started coming down. I love this picture of Rob and I, because it shows how mammoth this tree really is. After watching him climb as high as he could go and getting a…
