Ya’ll, I am so excited!! I am actually posting a recipe! I know, I’m about to pass out too. 😉 One of my goals this year is to post a new recipe every month. One a month, so by the end of the year there should be 12 new recipes. I would love to share more, but I need to start small. Anyway…I recently talked about the Stuffed Bell Peppers I made. I hadn’t made these in years and I was craving them a few weeks ago. This version doesn’t have any rice (low carb) and is also gluten free.…

Many years ago, I decided to start a new tradition. I’ve probably talked about this before, but I finally have a half way decent photo to share. Anyway, on Christmas Eve we always go to church that afternoon or evening and then the boys would come home and open their 1st gift which was always Christmas PJ’s. They did that till Drew told me he didn’t like that tradition anymore and didn’t want Christmas PJs. For a year or two after that I got Alex PJ’s and just got Drew a t-shirt of some kind. Then, when I felt like…

Hey yall! Long time no recipe. I mean LOooooong time. Like years! Ouch! Dang. Well anyway, I recently made these Cajun Ranch Pinwheels for a work function and had a couple people ask about the recipe. Luckily, I had a couple pictures of them so I decided to share them along with some other pinwheel recipe options. I will try to make the other Mix and Match Options and include those pictures at some point. I have noticed several recipes lately that reminded me of these pinwheels my Granny used to make and decided these would be perfect for our…

This year for Thanksgiving I wanted to try something other than the Apple Cornbread Dressing that I normally make. I found one from Emeril. I tweaked the recipe just a tad and was so glad I made it. Everyone loved it. It is a bit spicy, so if you like spicy then great. If not, see below on how to make it not spicy with some simple substitutions and omissions. This would go great with any turkey or ham. We deep fry a turkey that’s injected with Tony Chachere’s Creole Style Butter Marinade. I made a Popeye’s Cajun gravy copycat…

Lately I’ve been in a cookie making mood. I love these cookies that have chocolate chips, rice crispy cereal, and toffee bits. Such a yummy combination and a fun way to mix up your everyday chocolate chip cookie. The toffee bits add a flavor punch and crunch, along with the rice crispy cereal that adds a little more crunch. TIP: What I have found to be convenient is to make the cookies up. Go ahead and preheat the oven and make one pan full of cookies, which is maybe 8-12 cookies depending on the size of the pan. Then, I…

This is a post that I posted on my old blog back 5 years ago maybe. I will never forget though Rob’s reaction to this recipe was “where has then been all my life?!?!” I’ve wanted to make the dip again, but my family just really isn’t big dip eaters. I have used the leftovers for a few other recipes. I just love being able to take something prepared and enjoy it and then take what is left and re-purpose it. >>> Jalapeno Poppers – Repurposed Leftovers Servings: 12 Prep Time: 10 minutes Cooking Time: 30 minutes Ingredients: 3 (8…

Recently when I made some homemade dough in the bread machine, I had some dough left over. I didn’t want to waste it so Drew and I decided to try our hand at making some Mini Churros. They turned out great, so I’m afraid every time I make homemade dough we’re going to find a way to have some left over dough! If you don’t have any homemade dough, this would work great with refrigerated croissants or biscuits as well. These are definitely going on my menu for Cinco De Mayo! Servings:6-8 Prep Time: 5 minutes Cooking Time: 15 minutes…

Cinco De Mayo is just around the corner, so I’m rolling out a few Mexican recipes for you to consider for your Cinco De Mayo menu. My family doesn’t like casseroles, so I came up with the fancy name of Enchilada Stack, because it’s kinda like a Mexican Lasagna. I love everything about this dish and I think you will too! How can you not love beef, tortillas, and cheese stacked up? Yum!! Servings: 6-8 Prep Time: 15 minutes Cooking Time: 30 minutes Ingredients: 12 small tortillas cooking spray 1 tbs. olive oil 1 small onion, chopped 1 lb. ground…

I was super excited to throw this recipe together. However, when I placed it on the table my kids weren’t thrilled about the peas and carrots in this recipe. I told them they had to have some veggies one way or another! I, personally, like the sweetness that the peas and carrots add. After trying it, my boys said it wasn’t too bad. They ended up loving it, saying they wanted to have this at least once a week. Servings: 4 Prep Time: 5 minutes Cooking Time: 20 minutes Ingredients: 1 1/2 lbs. boneless skinless chicken breast halves cut into…

You know I was thinking the other day when I was cooking some pasta about back when I was growing up. If you’ve been reading my blog for awhile you probably know, or you may not know, that my Dad’s parents raised me. Now my Granddad absolutely hung the moon for me. I was a Granddad’s girl for sure. I loved so many things about Granddad. One thing was that he enjoyed cooking and he was pretty darn good at it. However, Grandmother did not relish the act of cooking and probably for that very reason, wasn’t very good at…

Servings: 4 Prep Time: 10 minutes plus time to marinade Cooking Time: 20 minutes Ingredients: 10 chicken wings (about 2 ½ lbs) – I used the full chicken wings because I couldn’t find regular…
