    I’m making every effort to cut back on carbs whenever possible. I found these mini-egg muffins easy to make a head of time. Each morning, I just pop a couple in the microwave for about 45 seconds and add some fresh fruit on the side.     Today was another busy day. It started off with Rob and I going to a friend’s house for the Polar Plunge, which was a fundraiser for Special Olympics. Rob and I were not plungers.     Church Retreat {2013}

    The past 3 years Drew has attended the Winter Retreat for the Youth at Shocco Springs. They usually have about 500 youth and about 100 adults go and he just loves it! Since he and his friends have started attending they always come back telling stories of God, spreading the word, and the football game…a boys vs girls football game; one for each grade level.     The other night, it was just before midnight, right before I was to get off work when one of my off duty student workers, B, came to make me aware that her and a couple of her friends were in the back of our department studying.     January’s End of the Month Summary {2013}

    This month I was happy about: getting to spend time with friends. This month I was sad worried sick about: my top teeth that are having issues because I grind and clinch when I sleep. Something I accomplished this month was: surviving. Something new I did was: go see an oral surgeon to make sure there was not a cyst on my top gums. The verdict was no, but he recommended I get my wisdom teeth out sometime soon. Luckily, I only have top ones! I’m going to wait and see what pans out with my initial issue mentioned above.…

    MLK Weekend in the Mountains with Friends

    Over MLK weekend we went up to Blue Ridge, Ga with our friends the “S” family. We left Friday night after loading up the car. We arrived about 9ish, just in time to set up our air mattresses and hope in. Saturday morning we awoke to Mr. S cooking bacon. Rob got up and started cranking out waffles. After that we got dressed.     …That I now have a 15 year old? I mean really! It blows my mind. Yesterday was Drew’s birthday. We celebrated by going to Shogun, where we feasted on Japanese food and he opened his presents.     Christmas Day 2012

    Christmas Day was busy. We started off with homemade sausage balls and apple strudals. Then Rob and I looked in our stockings and the boys showed us what they had in their stockings, since that’s the one thing they can look at before Rob and I get up.     Christmas Eve 2012

    Christmas Eve and the day before, I was busy baking and cooking. In the late afternoon of Christmas Eve, Alex performed in our church’s children pageant. He was a shepherd (without a headdress for some reason). Our preachers welcoming us. Afterwards, we went home to eat the Christmas Eve meal that I had prepared was similar to what I did last year. Instead of doing green beans, I made baked beans.
