I recently wrote about being burnt out with all the same recipes. I’ve been on a quest to find and tweak new recipes. Today I have a great one for ya! Get this! Spicy Bacon Wrapped Pineapple Bites! If you’re not too into Spicy or it bothers your stomach, feel free to leave out the cayenne. You can sub in some Soy Sauce for a little savoriness or just make them sweet. These are such an easy and delicious recipe that you can whip up in no time!
Servings: 6
Prep Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
1 can of pineapple – chunks (save the juice)
1 pound bacon, pieces cut in half
1/2 cup packed light brown sugar
1 1/2 tsp. cayenne pepper
Directions:
1. Preheat oven to 400°. Place Set a cooling rack inside a large baking sheet. Spray cooling rack with nonstick spray.
2. Mix together the brown sugar and cayenne pepper in a bowl.
3. Drain pineapple juice from can into a bowl and place pineapple on a plate.
4. Dip half a piece of bacon in pineapple juice and roll through brown sugar cayenne mix. Wrap bacon around each pineapple chunk and push toothpick through to hold bacon and place on rack. Do that until you run out of one of the ingredients.
5. Place in oven for about 25 minutes.
