Buffalo Chicken Meatballs {Crockpot}

Last year for Drew’s homecoming dinner, a group of his friends were meeting up for pictures and dinner at a friend’s house. My responsibility for the meal was to bring an appetizer. Buffalo Chicken Meatballs in the crockpot is what I finally decided to try. They turned out great and were quite a hit with the entire group.

I love that these Buffalo Chicken Meatballs can be prepared ahead of time and even frozen until you’re ready to throw them into the crockpot.

Buffalo Chicken Meatballs - Crockpot These Buffalo Chicken Meatballs are so easy and can be made in the crockpot. You can also make them ahead of time and freeze and just double the crockpot time. Perfect for parties or potluck dinners.

Prep Time: 10 minutes
Cooking Time: 2 hours

Ingredients:
1 lb. ground chicken
3/4 cup Panko bread crumbs
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 large egg
3/4 cup buffalo sauce – I like Moore’s because it’s not overly spicy hot.
1/4 cup ranch/blue cheese dressing


Directions:
1. In a large bowl, mix together ground chicken, Panko bread crumbs, garlic and onion powder, and egg.
2. Roll the mixture into ping pong size ball (about 1 1/4 inch). Should make about 25 meatballs.
3. Place meatballs in crockpot. Add buffalo sauce and toss carefully to ensure they are totally coated.
4. Put the cover on and cook on low heat for 2 hours.

Serve with celery/carrots and Ranch or Blue Cheese if desired.
