Recently I needed to bring something for a potluck breakfast. I wanted something new and different. I came up with these Peach Cobbler Muffin Bites. While it’s not quite peach season around here, I’m happy to come up with a recipe that can use canned peaches that way we can enjoy peachy goodness all year long! When May rolls around, I want to try this recipe with real peaches and make that an option in the recipe. So keep an eye out for that update.
These are great to make ahead or even freeze ahead. Peach Cobbler Muffin Bites are a great for brunch, breakfast, even an afternoon snack!
Servings: around 40 muffins
Prep Time: 15 minutes
Cooking Time: 35 minutes
Ingredients:
1 cup Bisquick baking mix
1 cup of milk
2 eggs
2 tsp. of vanilla
3 cans of well drained peaches
1 cup of sugar or splenda or a mixture of both
Directions:
1. Preheat the oven to 350°. Insert mini muffin tin liners. Spray with non-stick spray.
2. Mix Bisquick, milk, eggs, vanilla evenly distributed. Put to the side.
3. Make sure peaches are drained. Cut sliced peaches into smaller pieces and place in bowl.
4. Pour sugar/Splenda over peaches and stir until you can no longer see the grains of sugar/Splenda.
5. Pour peaches into batter and stir until evenly distributed.
6. Pour mixture into mini-muffin tin. Fill each cup up without letting it overflow.
7. Bake for 35 minutes or until gold brown.
8. Allow to sit for about 10 minutes before serving.
