I don’t know about you but this cold weather has me wanting to stay at home and not go anywhere. However, everything is getting back into the swing of things, so I don’t have much choice but to go out. Here in Auburn, we usually have a few days of 30 degree weather each year, but so far this year I don’t think it’s gotten above 45 degrees hardly. We’re just not used to 20 degree mornings and going home in the evenings its in the mid 30’s.
Anyway, I need something warm and comforting, so I whipped up this Dorito Chili Bowl dinner in the matter of minutes the other night. This is such an easy and versatile recipe that I think it will be added to my weekly meal plan quite often. 🙂
Servings: 3-4 people
Prep Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
1 big bag of Doritos
3 cups of Mexican shredded cheese
1 lb. of hamburger meat
1 small chopped onion
1 can of petite dice tomatoes
1 can of Texas style chili beans
2 tbs. chili powder
1 tsp. garlic powder
Other taco toppings you like: Chopped tomatoes, slice black olives, chopped green onions, etc
Directions:
1. Brown meat with chopped onion & garlic powder.
2. Stir in beans and chili powder. Cook for 3-4 minutes until nicely blended.
3. In each serving dish, layer slightly crumbled Doritos, chili meat, and cheese. Then, add any taco toppings you like and serve.
This is such a quick meal and it’s always a people pleaser. It’s also one that’s great to make ahead just put the chili mix in the fridge, heat up when ready, and throw the Doritos and chili mix in a bowl when you’re ready to eat.
