Cheesy Hamburger Potato One-Pot Dish

I recently had a week, where I decided I was not going to the grocery store. What we ate for dinner would come only from ingredients we had in the pantry/fridge/freezer. One of the nights, I looked in the fridge and saw a pound of ground beef, an onion, and about a half of red and green bell pepper that needed to be used. I looked in the pantry to find a few more things including some potatoes. I had recently found a recipe on a food website and I thought that I could make it into a one-pot dish, which is exactly what I did.

Cheesy Hamburger Potato One-Pot Dish

Servings: 4-6
Prep Time: 15 minutes
Cooking Time: 1 hour

Ingredients:
1 lb. lean ground beef
3 cups thinly sliced potatoes (either peeled or with skins)
1/2 cup chopped onions
1 can Cream of Mushroom soup
1/2 cup of Velveeta Cheese (I used the Mexican variety)
1/2 of a green bell pepper (chopped)
1/2 of a red bell pepper (chopped)
3/4 cup milk
1 1/2 cups shredded cheese
salt and pepper to taste

Directions:
1. Preheat oven to 350°.
2. Brown meat with chopped onion and peppers in an oven safe pan. I use Calphalon Contemporary Hard-Anodized Aluminum Nonstick Cookware, 12-inch Set. When meat is browned drain grease and pour meat mixture on to a paper plate.
3. Now that the pan is empty turn heat up just a little and melt the Velveeta cheese along with mushroom soup. Stir until cheese is completely melted.
4. Pour the cheese/soup mixture into a large bowl. Pour in milk and add salt and pepper. Stir.
5. The pan is empty again, so now layer half of the potatoes, soup mixture, and then the hamburger meat. Repeat. Then, add shredded cheese on top. Cover with top or aluminum foil and bake for about an hour.
