Mini Buffalo Chicken Pot Pies
A couple weeks ago I posted a yummy recipe of Chunky Buffalo Chicken. I made a triple batch of it because I had several pounds of chicken that I thawed out and it needed to be used. I love to do things like this to help expedite a meal later in the week. This saves so much time. So this is a “leftover remix!”

Cooking Time: 15 minutes

Chunky Buffalo Chicken
1/2 packet of Ranch mix
1 container of grands layers biscuits
2 cups of frozen veggie mix (peas, carrots, and corn)

1 can of cream of chicken soup
Chili {Crockpot}
It has been crazy, crazy cold. We got back home on Monday from 80° South Florida weather for 11 days, so this is quite a shock to the system. It was 14° yesterday with a windchill of -2°. I know you folks in the North have no pity on me, but I’ll just say I don’t know how you Northerners do it. So anyway, with all this cold I decided chili and cornbread waffles would be warm and comforting. If you’re having to brave the cold like I am, you should give this chili a try!
