Buffalo Joes

Last night I was wanting Buffalo Chicken something…I had a couple pounds of chicken in the fridge, so I decided to use all of that for some Buffalo Chicken. Keep an eye out for several recipes that will use the rest of this yummy chicken. I call these Recipe Remixes, which are great for those super busy nights.

Buffalo Joes - Looking for an easy recipe that uses up that chicken you have in the fridge?  This Buffalo Chicken recipe is a great solution!

Servings: 8
Prep Time: 5 minutes
Cooking Time: 25 minutes

Ingredients:
2 lb. boneless skinless chicken breasts; chunky/shredded
1 packet of Ranch mix
2-3 cup Buffalo Sauce
1 cup of chopped onion
1 tbs. minced garlic

Directions:
1. Brown chicken breasts with onion and garlic.
2. Once they’re cooked all the way through, shred with fork. I cut my into to chunky shredded pieces; a mixture of small chunks with some shredded.
3. Return chicken to pan, pour Ranch mix and Buffalo over chicken. Stir to ensure all meat is evenly coated with sauce.
4. Allow to cook for about 10 minutes.
