Ya’ll, I am so excited!! I am actually posting a recipe! I know, I’m about to pass out too. 😉 One of my goals this year is to post a new recipe every month. One a month, so by the end of the year there should be 12 new recipes. I would love to share more, but I need to start small. Anyway…I recently talked about the Stuffed Bell Peppers I made. I hadn’t made these in years and I was craving them a few weeks ago. This version doesn’t have any rice (low carb) and is also gluten free.…

Over this time of quarantine, I’ve stepped out of my comfort zone and have really tried to up my Instant Pot game. I thought through what I make on a regular basis that isn’t really that great and Spaghetti actually came to mind! Yeah, my Spaghetti is never that great. The sauce ends up runny. The noodle and sauce separate. I decided maybe the Instant Pot will be all the answers to this issue. And I was right! It did fix all my issues. My spaghetti in the Instant Pot is melded together and my kids say its the best…

Happy June, y’all! Are your kids out of school yet? Both mine are and I am so glad. I love summer because we aren’t running here and there in the evenings after work. Most nights I can go home and relax. I just haven’t had much of the cooking vibes lately, so I decided to try a new crockpot recipe. This summer I’m pulling some cookbooks off the shelf to try. I’ll be tweaking them to make them as easy as possible, like this recipe which I got from The Texas Cowboy Cookbook, which I made into a crockpot recipe.…

Cinco De Mayo is just around the corner, so I’m rolling out a few Mexican recipes for you to consider for your Cinco De Mayo menu. My family doesn’t like casseroles, so I came up with the fancy name of Enchilada Stack, because it’s kinda like a Mexican Lasagna. I love everything about this dish and I think you will too! How can you not love beef, tortillas, and cheese stacked up? Yum!! Servings: 6-8 Prep Time: 15 minutes Cooking Time: 30 minutes Ingredients: 12 small tortillas cooking spray 1 tbs. olive oil 1 small onion, chopped 1 lb. ground…

I don’t know about you but this cold weather has me wanting to stay at home and not go anywhere. However, everything is getting back into the swing of things, so I don’t have much choice but to go out. Here in Auburn, we usually have a few days of 30 degree weather each year, but so far this year I don’t think it’s gotten above 45 degrees hardly. We’re just not used to 20 degree mornings and going home in the evenings its in the mid 30’s. Anyway, I need something warm and comforting, so I whipped up this…

I love when I’m scrounging around in the kitchen for something for dinner and the ingredients just fall into place. That’s what happened the other night when I was looking for something to make in the crockpot for the next day. Lately I’ve been on a quest to buy 1 new ingredient once a month to try in a recipe. I’ve had this Radiatori pasta just hanging out in the pantry for awhile. I decided to give it a try in this Hamburger Pasta Soup. Have you ever heard of it before? Servings: Prep Time: 10 minutes Cooking Time: 8…

One of my favorite dishes that my Granddad made growing up is Frito Pie. I mean how can you turn down seasoned ground beef, cheese, and Fritos! This is one of those meals I also used to help Granddad make. This is a great meal to prepare with your kids, because it’s easy to prepare and it’s one everyone will love. Servings: 3-4 people Prep Time: 10 minutes Cooking Time: 15 minutes Ingredients: 2-3 cups of Fritos 3 cups of Mexican shredded cheese 1 lb. of hamburger meat 1 small chopped onion 1 can of Texas style chili beans 2…

It’s been awhile since I’ve come up with a new variation to my yummy roll-ups. The other night I had a serious craving for Philly Cheesesteaks, but we didn’t have any buns. Then, it occurred to me that I could make Philly Cheesesteak Roll-Ups. These were so delicious and since it was soccer practice night I could have them ready for on the go. Servings: 6 Prep Time: 25 minutes Cooking Time: 20 minutes Ingredients: 1 lb. steak (I used a cheaper cut, like Chuck Steak) Next time I’m going to use frozen thinly sliced steak similar to this: Philly…

I recently had a week, where I decided I was not going to the grocery store. What we ate for dinner would come only from ingredients we had in the pantry/fridge/freezer. One of the nights, I looked in the fridge and saw a pound of ground beef, an onion, and about a half of red and green bell pepper that needed to be used. I looked in the pantry to find a few more things including some potatoes. I had recently found a recipe on a food website and I thought that I could make it into a one-pot dish,…

I am constantly on the lookout for new Mexican dishes. I found this recipe for Tamale Pie and knew I had to try it. I decided to adapt it a bit and make into a One-Pot Tamale Pie. This recipe brought me back to the days when my Granddad would crack open a can of tamales, throw them in a pan, and heat them up. Yes, that wasn’t the healthiest of meals, but regardless its a memory and a flavor that I cherish. I’ve never tried making tamales on my own, which would be better for you than from a…

I know it’s been awhile since I’ve posted a recipe. That doesn’t mean haven’t been cooking. In fact, I have such a long list of recipes that I’ve made that I wasn’t even sure where to start. Posting this Italian Chili seemed like a good choice, because with kids starting back to school tomorrow I’m frazzled and when I put dinner in the crockpot that’s once less thing to worry about after work! Who doesn’t love that? Servings: 6-8 Prep Time: 20 minutes Cooking Time: 6 hours Ingredients: 1 lb. ground beef 1/2 lb. Italian sausage 1 can (28 oz.)…

Hope y’all have had a lovely Memorial Day weekend. Even though it’s a long weekend, I’m still going to need a quick and easy dinner resolution for this week. This One-Pot Pasta Bake is an awesome recipe. Dirty up one pan and have dinner ready in about 30 minutes! I’m also going to be having a frozen dinner I made last week, which was this easy peasy Lasagna. Servings: 6-8 Prep Time: 5 minutes Cooking Time: 20 minutes Ingredients: 8 oz. of pasta 1 lb. of hamburger meat or Italian Sausage 3 tbs. of Oregano 1 can of tomato sauce…

Lately I’ve really been thinking about one-pot meals. Who doesn’t love making dinner and just dirtying one, single pot or pan? I know I do. This One-Pot Cowboy Chili is quite simple and with a house full of guys I need lots of food. This meal is one that has them pushing back from the dinner table full and happy. What more could you ask for! Servings: 6-8 Prep Time: 15 minutes Cooking Time: 30 minutes Ingredients: Chili: 2 lbs. ground beef 1 medium onion, diced 1 tbs. garlic 1/3 cup of Chili Powder 1 can of Black, pinto, or…

Lasagna has been one of those dishes that I have struggled with and finally quit trying. Drew gave me a cookbook for Christmas called Gooseberry Patch 5 Ingredient Family Favorites and it has the recipe in there, so I decided to give it a try again. I did have to improvise, because I didn’t have any pasta sauce on hand. I am so glad I decided to give Lasagna! It turned out amazing. I’m not sure what my hang up was before, but whatever it was it seems this recipe resolved it. I’m curious to know what dishes you avoid…

I am always trying to figure out easy Mexican dishes, as well as meals that can be made quickly or in the crockpot. This recipe fits the bill for all 3 of those requests. I make this in the crockpot, but you could easily put this in a pot and cook on medium-high for 30 minutes or so and it would be just as good. Servings: 6 Prep Time: 15 minutes Cooking Time: 4 hours Ingredients: 2 pounds ground beef, browned 1/2 cup taco seasoning 1-1/2 cups beef broth or water 1 can chili beans, drained and rinsed 1 can…
