Cooking Time: 30-45 minutes
Ingredients:
1.5 lb. ground beef/turkey
3/4 cup chopped onion
1 minced clove garlic
14 oz. can tomato sauce
14 oz. can petite diced tomatoes
8 oz. can of green chilies
1 cup of italian breadcrumbs
1 scrambled egg
1/4 lb. mozzarella cheese
Directions:
1. Preheat oven to 400.
2. Mix together all ingredients except cheese and leave about 1/4 of the can of tomato sauce out to using your hands. It’s the only way to really get ingredients mixed well.
3. Spray the muffin tin with non-stick spray.
4. Divide meat mixture in half. Take half of the meat mixture and take a 1/4 of a cup and place that in each cup.
5. Place a small square of cheese in each muffin cup.
6. Take the rest of the meat mixture and place enough to cover over cheese.
7. Take the rest of the tomato sauce and spread over each meat muffin.
8. Cook for about 30-40 minutes. The cheese will melt out some, but not to worry all the flavor is there. So yummy.
