I’m always looking for easy ways to make yummy food a little healthier. I recently watched an episode of Trisha Yearwood on Food Network and decided to give it a try with a couple differences.
If you’re kids need something to dip this in, you whip up some Fat-Free Honey Mustard Sauce or Chick-fil-A Honey Roasted BBQ Sauce.
Servings: 4
Prep Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
1 cup milk
1 tbs. hot sauce (Tabasco)
4 boneless, skinless chicken breasts
1 1/2 cups Panko breadcrumbs
1/2 cup powdered Parmesan
1/2 tsp. cayenne pepper
1/4 tsp. paprika
1 lemon (1 tbs. zest, juice from the Lemon)
Sea salt and black pepper
Directions:
1. Preheat the oven to 400° F.
2. Put milk and hot sauce in a shallow bowl. Put the chicken in the milk.
3. Stir together the breadcrumbs, Parm, lemon zest, red pepper flake, and some salt/pepper in a shallow dish.
4. Pick up a piece of chicken from the dredge through the breadcrumb mixture. Make sure to get the chicken coated on both sides. Repeat that with all the chicken pieces.
5. Place the chicken in baking dish and cook for 20-30 minutes. Sprinkle lemon juice over top of each piece.
