    Cornbread Waffles

    I’ve been hearing about cornbread waffles and decided to try it out. The kids thought I’d lost my mind when I told they saw a “waffle” in their chili. However, they ended up loving it. Now if you’re in a rush or just feeling lazy you can simply use the JIFFY cornbread mix. You just follow the directions on the box. Spray your waffle iron with non-stick spray on top and bottom and pour about half of the mixture in. Let it cook until it beeps.     Boy Scout Ski Trip 2014::Gatlinburg, TN {Day 3 & 4}

    Boy Scout Ski Trip 2014::Gatlinburg, TN {Day 1 & 2}

    Friday we headed out in a caravan with Drew’s troop towards Gatlingburg for a weekend of ice skating, snow tubing, skiing and more fun. We got in around 1am, handed out keys to boys, and found our way to our cozy little room. Driving through downtown Gatlinburg to our hotel Saturday morning we got up and shoved down some hotel breakfast before hitting the town. Who can’t go to Gatlinburg without drooling over the caramel apples, taffy, and handmade candies?

    This past weekend we went to Birmingham for our Cub Scout Winter Trip to McWane Center. We did this back in 2012 and had such a good time. It is such a fun trip and is so easy for the leaders.     Late Saturday night, I sat at my Granny’s bar shuffling through songs on my laptop from Bob Dylan, ZZ Top, and Eric Clapton.     Over MLK weekend we went up to Blue Ridge, Ga with our friends the “S” family. We left Friday night after loading up the car.     Memories of the Month {1.2013}

    This month I was happy about: getting to spend time with friends. This month I was sad worried sick about: my top teeth that are having issues because I grind and clinch when I sleep. Something I accomplished this month was: surviving. Something new I did was: go see an oral surgeon to make sure there was not a cyst on my top gums.     This month I was happy about: getting a “Leading Performance (exceeds expectations)” on my 1st end of the year evaluation at my job. This month I was sad about: Rob being sick.
