I have always enjoyed corn, but sometimes it’s fun to change it up some. I wanted a corn dish that could be served as a cold salad. This corn salad is so simple and can be made ahead of time. This is perfect for a potluck.

Ingredients:
1 (15 oz) cans corn, drained
1 cups grated cheese (I use Mexican Blend)
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
1 cup Chili-Cheese Frito’s
Directions:
1. Toss all ingredients except the Frito’s in a medium size bowl.
2. When you’re ready to serve, toss in the Frito’s, stir, and serve.
