Cinco De Mayo is just around the corner, so I’m rolling out a few Mexican recipes for you to consider for your Cinco De Mayo menu. My family doesn’t like casseroles, so I came up with the fancy name of Enchilada Stack, because it’s kinda like a Mexican Lasagna. I love everything about this dish and I think you will too! How can you not love beef, tortillas, and cheese stacked up? Yum!!
Servings: 6-8
Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients:
12 small tortillas
cooking spray
1 tbs. olive oil
1 small onion, chopped
1 lb. ground beef
1/3 cup taco seasoning
1 15 oz. can pinto beans, drain and rinse
2 cups red enchilada sauce (Like Las Palmas and Rosarita )
2 1/2 cups shredded cheddar cheese
2 tomatoes, seeded and finely chopped
1/4 cup sliced green onions
Directions:
Preheat the oven to 350°.
Spray 9×13 baking dish with nonstick spray.
Heat the oil in a large pan over medium heat. Add in chopped onions and caramelize. Once they start to soften add in ground beef. Chopped up the meat with the end of your spatual as you brown the meat.
Add in the taco seasoning and stir until it’s mixed all through the meat.
Pour in beans and mix.
Spread about 1/4 cup of enchilada sauce in baking dish bottom.
Layer 4 tortillas.
Add 1/2 of meat mixture and 1/2 of shredded cheese.
Pour 1/2 cup of enchilada sauce over cheese.
Repeat process.
Add once more set of 4 tortillas on top. Pour remaining sauce and sprinkle cheese.
Cover dish with foil and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes or until cheese is melted and browned.
Top with tomatoes and green onions. Let cool for 5 minutes before cutting.
