Chorizo Empanadas
Happy National Empanada Day! Celebrate by trying these easy Chorizo Empanadas.

Ingredients:
1/2 lb. ground beef
1/2 lb. Chorizo
1 onion, chopped (1/2 cup)
1/2 tsp. chili powder
1 can (14 1/2 oz) diced tomatoes with mild green chiles, well drained
1 box refrigerated pie crusts
1/2 cup shredded Monterey Jack cheese
Egg Wash:
1 beaten egg with 2 tbs. of milk
Dip
1/2 of Greek yogurt or sour cream
1/2 of cheddar cheese
2 tbs. Green Chilies

Chili Citrus Spice Marinade
This recipe is called Chili Citrus Spice Maridinade that would be great with pork or chicken. You could do like I did and cook it in the oven or even better yet you could cook it on the grill.

Sausage, Shrimp, And Spinach Bowl
While in Atlanta a few weeks ago, Rob and I enjoyed a meal at Steamhouse Lounge. We got the Sausage, Shrimp, And Spinach dip, that was absolutely killer! That dip inspired this meal. After my initial time making it, I plan to tweak it, which I’ve noted in the directions below.

Ingredients:
1/2 cup of Velveeta cheese
1 box of cream cheese (8 oz.)
1 can cream of chicken soup
1 cup of Mexican shredded cheese
1/2 lb. smoked sausage
8 oz. of shrimp (I used the tiny salad shrimp)
1/2 cup of frozen spinach
1/4 cup of Tabasco
2 tsp. of Cayenne pepper
Sweet & Sour Pork
As a huge fan of sweet and sour entrés at most Chinese style restaurant chains usually, this one caught my attention while I was looking for new recipes the other day. I wanted to give it a try, because it’s very different from my normal meals.
I’m not always a fan of pre-made sauces, but I wanted something easy that didn’t need a ton of different ingredients just for the sauce. I was happy with the way it turned out.

Tangy Pork Tenderloin Marinade
I love this recipe. It’s great actually for all types of pork, not just tenderloin. I love that is good whether its cooked in the oven or on the grill.

2 tbs soy sauce
1 tbs canola oil
1 tbs Worcestershire
1/2 tsp garlic powder

This recipe for Stuffed Pasta Shells is on of my absolute favorites. It does require more prep time than I prefer, but I usually make at least 2 batches and free one. Who doesn’t love freeze ahead meals? 2 bangs for your buck!

1 pound mozzarella cheese, shredded
1 (15 oz.) container ricotta cheese or cottage cheese (for less fat)
1 lb. of meat (hamburger meat/Italian sausage)
2 cups grated Parmesan cheese
1 (28 oz.) jar pasta sauce (I make my own sauce.)
