Ravioli Soup

I’ve tried my hand at Ravioli soup and finally after the 3rd try I think I nailed it! This is so easy. Done in less than 30 minutes as long as you don’t have to thaw the meat. A true crowd pleaser.

Raviolo Soup

Servings: 6
Prep Time: 10 minutes
Cooking Time: 15 minutes

Ingredients:
1 tbs. olive oil
1 pound spicy Italian sausage
3 cloves minced garlic
1 diced onion
1/2 diced green peppers
2 cups chicken stock
1 (28 oz.) can crushed tomatoes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. crushed red pepper flakes
Kosher salt and freshly ground black pepper, to taste
1 (20-ounce) large package refrigerated cheese ravioli (I would love to find mini-raviolis for this recipes)
1/4 cup grated Parmesan
1 cup croutons

Directions:
1. Heat olive oil in a stockpot. Add in diced onion and green peppers allow to caramelize for a few minutes. Add in Italian sausage. Cook on medium heat until meat is cooked through. Be sure to break up the meat with a wooden spoon or spatula. Drain grease.
2. Stir in crushed tomatoes, basil, red pepper flake, oregano along with a cup of water. Bring to rolling boil and add in ravioli. Reduce heat and simmer for about 5 minutes.
3. Serve with graded parm and croutons.

    This looks delicious! I love ravioli–it’s just such a great comfort food. Plus, this looks super easy, which is a must around here these days, as I have a toddler who needs constant looking after! 🙂
