Alex and I were home one night and I needed to make something quick and easy for dinner, because he was wanting to watch a movie. I thought it would be fun to get him in the kitchen and these Pizza Monkey Bread Bites were a perfect recipe to have him help with. Monkey bread is just the quintessential kid food!

Cooking Time: 15 minutes
Ingredients:
3 (12 oz) packages of refrigerated biscuit dough – I used homemade dough recipe found here.
3 cups Mozzarella cheese
1 cup (2 sticks) butter
1 package of
Mini Pepperonis
1/2 cup Parmesan cheese
Basil Marinara Sauce
3 tbs. of Basil or more
1/4 cup Parmesan
1 can of tomato sauce
1 can of tomato puree
2-3 pinches of red pepper flake (optional)
Directions:
1. Preheat oven to 350°. Place cupcake liners in your muffin pan and spray the liners with non-stick spray.
2. Put the Parmesan and melted in a large bowl and stir. Cut the dough in to bite-sized pieces.
3. Put the pieces of dough in the bowl and make sure they all get coated with butter and parm. Pour cheese and pepperonis on a plate.
4. Roll the pieces of dough through the cheese and pepperonis.
5. Fill each muffin tin with dough. Keep doing that until all dough is used or pan is full.
7. Bake the muffins for about 15-20 minutes.
8. Allow muffins to cool just a bit and enjoy!
To make the marinara sauce, just pour all the ingredients into a sauce pan and heat on medium high for 10 minutes or until heated through.
