I used to love getting the chicken cordon bleu in the frozen section until I realized how much sodium they had. Really overall, just super unhealthy. I love being able to recreate something that I love making it the way I want to and that gives you the liberty of making it healthier.
Chicken Cordon Bleu
Servings: 4
Prep Time: 10 minutes
Cooking Time: 35 minutes
Ingredients:
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese or Pepper Jack for some spiciness
4 slices cooked ham
1 egg
1 cup seasoned bread crumbs
Directions:
1. Preheat oven to 350 degrees. Spray a baking dish with nonstick cooking spray.
2. Split chicken breast, fold open, and pound chicken breasts to 1/4 inch thickness.
3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Fold each breast, and secure with a toothpick if necessary.
4. Dip breast into egg and then roll in bread crumbs until covered evenly.
5. Bake for 30 to 35 minutes, or until chicken is no longer pink. Let chicken sit for a few minutes before serving.
