This Chicken And Cheese Quesadillas recipe is so easy. I’m not sure how many of you have a panini maker. It was one of those interesting gifts I got from the in-laws which turned out to be awesome! However, I got tired of throwing bread and a different variety of meats in there, so I decided to try quesadillas in the panini maker. So much easier!
Even if you don’t have a panini maker, still a super easy thing to put together for a tailgate.
Servings: 4
Prep Time: 5 minutes
Cooking Time: 5 minutes
Ingredients:
taco seasoning
1 lb. of shredded chicken
1/2 cup of onion
1/2 cup of bell peppers
1 small can of green chilies
1 cup of Mexican shredded cheese
small tortillas
Salsa
Sour Cream
Directions:
1. Add a little olive oil to a skillet.
2. Cook chicken, onions, and bell pepper until chicken is cooked all the way through and onions/peppers are caramelized.
3. Take chicken out of the pan and either shredded with a fork or be lazy like me and put chicken in food processor. Pulse 1-2 times being sure not to shred the chicken too much. Sprinkle in taco seasoning and 2 tbs. of water. Stir.
4. Place tortilla on panini maker or in a clean butter skillet. Cover tortilla with chicken mixture and then cheese. Place another tortilla on top of that. If you’re using a panini maker, close the lid and cook for 1-2 minutes depending on brown you want it. If you’re using a skillet, cook for 1-2 minutes on each side. Press down with spatula as it cooks.
5. Cut into 4 piece and service with salsa and sour cream.
