It’s about that time to pull out all those Irish meals to enjoy on St. Patrick’s Day. One of my all time favorites over the last few years has been Shepherd’s Pie. It’s so easy and such a great comfort food. Perfect for those still chili nights!
Servings:
Prep Time: 15 minutes
Cooking Time: 20 minutes
Ingredients:
2-3 cups of mashed potatoes
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground turkey
1 1/2 cups of frozen peas, carrots, and corn
1 tbs. minced garlic
1 chopped onion
2 tbs. Worcestershire
Directions:
1. Heat a large skillet on medium-high heat. Brown mean with onion until meat cooked through and onions are caramelized. Drain grease.
2. Toss in garlic. Pour Worcestershire sauce over meat and allow to simmer for 1-2 minutes.
3. Add in carrots, peas, and corn. Cook for 4-5 minutes.
4. Pour meat mixture into 9×13 backing dish. Spread mashed potatoes over meat mixture smoothly. Top with a little grated cheese.

I’ve been looking for a shepherds pie recipe that’s easy and this one looks just about it. I’m not a corn person, so I’d probably pass that part up even though my other half is corn crazy. I’ll let you know if I try. (:
