I know it’s been awhile since I’ve posted a recipe. That doesn’t mean haven’t been cooking. In fact, I have such a long list of recipes that I’ve made that I wasn’t even sure where to start. Posting this Italian Chili seemed like a good choice, because with kids starting back to school tomorrow I’m frazzled and when I put dinner in the crockpot that’s once less thing to worry about after work! Who doesn’t love that?
Servings: 6-8
Prep Time: 20 minutes
Cooking Time: 6 hours
Ingredients:
1 lb. ground beef
1/2 lb. Italian sausage
1 can (28 oz.) diced tomatoes
1 can (8 oz.) tomato sauce
1 cup chopped onion
1 cup water
1/2 cup chopped celery
2 cup beef broth
1 tbs. chili powder
1 tsp. Italian seasoning
3 tbs. honey
1 tsp minced garlic
1/2 tsp. salt
1 can (16 oz) kidney beans, rinsed and drained
1 cup sliced fresh mushrooms
1 cup diced zucchini
3 tsp. minced fresh parsley
Shredded mozzarella cheese, optional
Directions:
1. Cook beef and sausage over medium heat until brown in a large skillet. Make sure meat is crumbled up and there’s not any big chunks of meat.
2. In a crockpot, combine the all other ingredients.
3. Drain beef mixture and add to crockpot. Cover and cook on low for 6 hours or until vegetables are tender.
4. When ready to serve, scoop into bowl and sprinkle with cheese, if desired.
