I’ve been hearing about cornbread waffles and decided to try it out. The kids thought I’d lost my mind when I told they saw a “waffle” in their chili. However, they ended up loving it. Now if you’re in a rush or just feeling lazy you can simply use the JIFFY cornbread mix. You just follow the directions on the box. Spray your waffle iron with non-stick spray on top and bottom and pour about half of the mixture in. Let it cook until it beeps. You’ll probably get about 2 waffles if you have a Belgium waffle maker like I do. Or if you’re wanting to say you made it from scratch follow the recipe below. 🙂 The nice thing about cornbread in the waffle make is you don’t have to power up your oven which makes for a cooler kitchen and its so much faster in the waffle maker.
Servings: 2 (depending on the size of your waffle iron)
Prep Time: 5 minutes
Cooking Time: 5 minutes
Ingredients:
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
3 tbs. granulated sugar
1 tbs. baking powder
1/4 tsp. salt
2 tbs. vegetable oil
1 egg
1/2 cup milk
Directions:
1. Combine dry ingredients in a large bowl and stir until evenly distributed.
2. Carefully whisk in the vegetable oil, egg, and milk until the lumps disappear.
3. Make sure your waffle is preheated and ready. Spray with nonstick spray. Then, pour about half of mixture, close and allow it to cook.
