A while back I made Sausage muffin bites and they were so easy and delicious. I had some cooked shredded chicken and some bacon that needed to be eaten. I decided to try substituting those instead of the sausage. These Chicken Bacon Ranch Bites make for a savory muffin bite that’s great for a brunch or snack or a savory breakfast.
Servings: 24 muffins
Prep Time: 10 minutes
Cooking Time: 35 minutes
Ingredients:
2 cups shredded cheese (I used Mexican Blend)
1/2 lb. bacon (browned and crumbled)
1/2 lb. chicken (browned and shredded)
1 cup Bisquick All Purpose Mix
1 pack of Ranch dressing powder
2 tbs. of honey
1 cup of milk
2 eggs
1/2 finely chopped onion
Directions:
1. Preheat the oven to 350°. Spray mini-muffin tin with non-stick spray.
2. Put all the ingredients in a bowl and mix until everything is evenly distributed.
3. Pour mixture into mini-muffin tin. Fill each cup up without letting it overflow.
4. Bake for 35 minutes or until gold brown.
5. Allow to sit for about 10 minutes before serving.

I saw the words ranch and bacon and knew I had to click over. Two of the most delicious things in one, YES! I’m all about savory and recent we made a similar sausage muffin. So good!
