It’s about that time to pull out all those Irish meals to enjoy on St. Patrick’s Day. One of my all time favorites over the last few years has been Shepherd’s Pie. It’s so easy and such a great comfort food. Perfect for those still chili nights! Servings: Prep Time: 15 minutes Cooking Time: 20 minutes Ingredients: 2-3 cups of mashed potatoes 1 large egg yolk 1/2 cup cream, for a lighter version substitute vegetable or chicken broth Salt and freshly ground black pepper 1 tablespoon extra-virgin olive oil, 1 turn of the pan 1 3/4 pounds ground beef or…

This is a recipe for one of my favorite Mexican dishes, Chimichangas. I could totally eat tacos or burritos once or twice a week with no complaints. However, the fam is not huge fans of tacos. With that being said, I’ve had to come up with some new Mexican dishes. I always know that a dish is a winner when the kids ask for on a regular basis. Makes: 4-8 servings Prep Time: 35 min Cook Time: 15-20 min Ingredients 1 lb. ground beef 1/2 cup finely chopped onions 2 cloves minced garlic 1 tsp. dried oregano leaves 1/2 cup…

Ever since last summer when I had the Steakhouse Burger at McDonald’s, I’ve wanted to make it at home. I decided to try and recreate it and come up with an easy recipe. I was able to recreate it, so I would definitely call this a “copycat recipe.” Servings: 4-6 Prep Time: 15 minutes Cooking Time: 15 minutes Ingredients: Burger: 1 1/2 lbs. of hamburger meat 1 packet of onion mix 1/3 cup of Worsteshire 1/2 tsp. pepper 8-12 pieces of “Giant” bread (thicker cut white sandwich bread) Spray butter garlic powder lettuce tomato French fried onions Provolone cheese

It has been crazy, crazy cold. We got back home on Monday from 80° South Florida weather for 11 days, so this is quite a shock to the system. It was 14° yesterday with a windchill of -2°. I know you folks in the North have no pity on me, but I’ll just say I don’t know how you Northerners do it. So anyway, with all this cold I decided chili and cornbread waffles would be warm and comforting. If you’re having to brave the cold like I am, you should give this chili a try! Servings: 6-8 Prep Time:…

The other night I was seriously craving tacos and when I looked in the pantry we didn’t have any tortillas or any taco shells. I always think back to the days when I used to go to Taco Bueno, when they had the yummiest Taco sandwiches. I looked to see if we had any buns, which we did. I was in business! My family was totally making fun of me, but once they tried it there mouths were too stuffed to say anything. Servings: 4-6 Prep Time: 5 minutes Cooking Time: 25 minutes Ingredients: 1 1/2 lbs. of ground beef…
