Rob loves him some Cadbury eggs, so I decided to try to incorporate that into one of my favorite desserts; brownies! These, Cadbury Mini-Brownie Bites, are so easy and yummy. Perfect for the Spring and Easter season.
Servings: 20-24
Prep Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
1 cup butter
2 cups sugar
4 eggs
2 tsp. vanilla extract
2/3 cup unsweetened natural cocoa powder
1 cup all purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
2 packages of mini-Cadbury eggs (24 total)
Directions:
1. Preheat oven to 350° degrees. Prepare mini-muffin pan by spraying with non-stick spray.
2. Melt butter and stir in sugar. Add in eggs and vanilla extract and mix with hand mixer.
3. In another bowl mix cocoa powder, flour, baking powder, and salt. Stir and then add dry ingredients into wet batter. Be careful not to overmix as this make the brownies hard.
4. Pour batter into each muffin cup. Don’t fill up all the way.
5. Push a Cadbury egg down into each cup of batter.
6. Cook for 25 minutes or until cooked all the way through.
7. Allow them to cool before removing from pan.
