Recently we celebrated my Father-in-law’s birthday and I wanted to make a cake, but wanted something other than your typical chocolate cake. I hunted around my recipes and found a recipe for butter cake. I had all the ingredients and it didn’t seem complicated so I gave it a shot. With a couple tweaks it was one of the best desserts I’ve ever made.
Servings: 15-18 depending on size
Prep Time: 10 minutes
Cooking Time: 30 minutes
Ingredients:
2 cups flour
1 cup sugar
1 tbs. baking powder
1 tsp. salt
1/2 softened cup butter
3 eggs
8 oz. softened cream cheese
3 1/4 cups sifted powdered sugar
3 tsp. vanilla extract
Directions:
1. Preheat oven to 350°. Spray a 9×13 baking pan and set aside.
2. Blend flour, sugar, and baking powder, salt, with butter using an electric mixer. Add 1 egg and blend until mixed through. Press this mixture into baking pan evenly and place in fridge.
3. Mix cream cheese, powdered sugar, vanilla, and 2 eggs until light and fluffy. Remove pan from fridge and pour this mixture over the bottom crust layer.
4. Bake for about 30-35 minutes until edges are golden brown.
5. Cool for a minimum of 30 minutes. Then cut and serve.

Mmmmm! These remind me of butterscotch Blondies my childhood friend’s mom used to make for our after school snack years ago. These bars look moist and delicious. Pinning this recipe. Hope to mix some up in the near future!
