With the kids going back to school this week, I’m always reminded of PBJ’s tucked away in the old metal lunch boxes. I found this yummy recipe for PBJ muffins. I love them, because there not too sweet. A great snack to welcome your kids with after a busy day at school.
Servings: 12 muffins
Prep Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1/2 cup crunchy peanut butter
2 tablespoons butter or margarine
1 cup milk
2 large eggs
1/2 cup jelly
Directions:
1. Preheat oven to 400 degrees.
2. In a large bowl, mix together flour, sugar, baking powder and salt.
3. Slowly cut in peanut butter and butter until its crumbly.
4. Mix in milk and eggs until all mixture is wet.
5. Pour batter into muffin pan.
6. Bake in for about 15 minutes.
7. Top with jelly flavor of your choice and serve warm.
