My Granny was one of the best cooks around. One of my favorite things she made was her banana nut bread. When I started making the bread, I decided I’d like them to easier to eat on the go, so I made them into muffins. Just as good, just easier to eat on the run. So yummy and convenient. Granny would be proud.

1 1/2 cups sugar
1/2 cup oil
2 eggs
1/2 cup buttermilk
1/4 tsp. salt
1 1/2 cups ripe mashed bananas
2 cups flour
1 tsp. vanilla
1 tsp. soda
3/4 cup nuts
Directions:
1. Preheat oven to 350°.
2. Cream sugar and oil. Beat in eggs.
3. Add creamed bananas to sugar mixture.
4. Add soda to buttermilk and bat into sugar mixture.
5. Add flour and salt.
6. Add vanilla and nuts.
7. Place in greased and flour pans. Bake for about 1 hour in bread pan. For muffins, cook 30 minutes.
