Butterscotch Apple Toffee Cookies

Ingredients
  • 2½ cups flour
  • 1 cup butter, softened
  • 1 cup light brown sugar
  • 1 package of Instant Butterscotch Pudding
  • 2 eggs
  • 1½ tsp. vanilla
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup of peeled, diced Granny Smith or Gala apples (about 2 small or 1 large)
  • 1 cup Heath Toffee Bits Chips
Instructions
  1. Preheat oven to 350°
  2. Cream butter and sugar together until light and fluffy.
  3. Add in pudding mix, eggs and vanilla and mix until combined, scraping sides as needed.
  4. With mixer on medium add in baking soda and salt until incorporated.
  5. Turn mixer to low and mix in flour until combined.
  6. Fold in apples and white chocolate chips.
  7. Scoop onto a parchment lined baking sheet using a large cookie scoop about 2 inches apart.
  8. Bake for 9-10 minutes until edges are golden.
  9. Allow to cool about 3 minutes before transferring to wire rack to cool.
  10. If so desired you can add a little more toffee bits on top or even some pecans, melt on caramel, or white chocolate chips.
