One-Pot Southwest Skillet Beef & Rice

Ingredients
  • 1½ lb. ground beef
  • 1½ cups uncooked white rice
  • 1 can of chopped tomatoes and green chilies
  • 1 can black beans (drain and rinse)
  • 1 large onion, diced
  • ¼ chili powder
  • 1 tsp. minced garlic (or to taste)
  • 1 large chopped jalapeno pepper
  • ⅓ cup of ketchup
  • sour cream (optional)
Instructions
  1. In a large skillet, brown ground beef, diced onions, and garlic. I use
  2. Calphalon Contemporary Hard-Anodized Aluminum Nonstick Cookware, 12-inch Set
  3. When meat is brown, drain grease. Sprinkle chili powder over meat mixture along with jalapenos. Stir in 2 cups of water. Pour in uncooked rice and bring to a boil. Lower to a rolling simmer.
  4. Let it simmer for about 15 minutes. Water should start dissipating.
  5. Pour in can of chopped tomatoes and green chilies, beans, and ketchup. Stir.
  6. Allow to simmer for 10 minutes or until rice is tender and water gone.
  7. Serve with a dollop of sour cream if you like.
