Lasagna

- 10 oz. pkg. lasagna noodles, uncooked
- ½ lb. ground beef
- ½ lb. ground Italian pork sausage
- 1 onion, diced
- 1 clove garlic, minced
- 14.5 oz. can Italian-seasoned petite tomatoes
- 14.5 oz. can tomato sauce
- 1 small can tomato paste (6 oz.)
- 2 tbs. Italian seasoning
- 3 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 4 cups of shredded Mozzarella
- 2 eggs, beaten
- 2 tbs. dried parsley
- salt and pepper to taste
- Preheat oven to 350°.
- Cook noodles according to package directions and drain.
- While those are cooking, brown the beef and sausage and onion in a medium-sized skillet.
- Drain grease and add garlic, tomato sauce, tomatoes, tomato paste, and Italian seasoning.
- Allow to simmer for about 10 minutes.
- Mix together, ricotta, Parmesan cheeses, and eggs.
- Spray a 13x9 baking dish with non-stick cooking spray. Place noodles across the bottom of the dish.
- Add in ½ cup of beef mixture evenly over noodles.
- Add in ½ of the cheese mixture and then Mozzarella.
- Repeat and end with Mozzarella on top.
- Cover with aluminum foil and bake at 350° for 45 minutes to an hour.
- Let stand for 10 minutes before serving.
