Banana Nut Bread Muffins

- 1½ cups sugar
- ½ cup oil
- 2 eggs
- ½ cup buttermilk
- ¼ tsp. salt
- 1½ cups ripe mashed bananas
- 2 cups flour
- 1 tsp. vanilla
- 1 tsp. soda
- ¾ cup nuts
- Preheat oven to 350°.
- Cream sugar and oil. Beat in eggs.
- Add creamed bananas to sugar mixture.
- Add soda to buttermilk and bat into sugar mixture.
- Add flour and salt.
- Add vanilla and nuts.
- Place in greased and flour pans. Bake for about 1 hour in bread pan. For muffins, cook 30 minutes.
