Buffalo Chicken Meatballs {Crockpot}

Ingredients
  • 1 lb. ground chicken
  • ¾ cup Panko bread crumbs
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • 1 large egg
  • ¾ cup buffalo sauce - I like Moore's because it's not overly spicy hot.
  • ¼ cup ranch/blue cheese dressing
Instructions
  1. In a large bowl, mix together ground chicken, Panko bread crumbs , garlic and onion powder, and egg.
  2. Roll the mixture into ping pong size ball (about 1¼ inch). Should make about 25 meatballs.
  3. Place meatballs in crockpot. Add buffalo sauce and toss carefully to ensure they are totally coated.
  4. Put the cover on and cook on low heat for 2 hours.
Notes
Serve with celery/carrots and Ranch or Blue Cheese if desired.

TIP: You can make these ahead of time and freeze. Just double the cooking time (total 4 hours on low) to ensure they are cooked through.
