I've tried my hand at Ravioli soup and finally after the 3rd try I think I nailed it! This is so easy. Done in less than 30 minutes as long as you don't have to thaw the meat. A true crowd pleaser. Servings: 6 Prep Time: 10 minutes Cooking Time: 15 minutes

Serves: 6
Ingredients
1 tbs. olive oil
1 pound spicy Italian sausage
3 cloves minced garlic
1 diced onion
½ diced green peppers
2 cups chicken stock
1 (28 oz.) can crushed tomatoes
½ tsp. dried basil
½ tsp. dried oregano
¼ tsp. crushed red pepper flakes
1 (20 oz.) large package refrigerated cheese ravioli (I would love to find mini-raviolis for this recipes)
¼ cup grated Parmesan
1 cup croutons
Instructions
Heat olive oil in a stockpot. Add in diced onion and green peppers allow to caramelize for a few minutes. Add in Italian sausage. Cook on medium heat until meat is cooked through. Be sure to break up the meat with a wooden spoon or spatula. Drain grease.
Stir in crushed tomatoes, basil, red pepper flake, oregano along with a cup of water. Bring to rolling boil and add in ravioli. Reduce heat and simmer for about 5 minutes.
Serve with graded parm and croutons.
