Peach Cobbler Muffin Bites

- 1 cup Bisquick baking mix
- 1 cup of milk
- 2 eggs
- 2 tsp. of vanilla
- 3 cans of well drained peaches
- 1 cup of sugar or splenda or a mixture of both
- Preheat the oven to 350°. Insert mini muffin tin liners. Spray with non-stick spray.
- Mix Bisquick, milk, eggs, vanilla evenly distributed. Put to the side.
- Make sure peaches are drained. Cut sliced peaches into smaller pieces and place in bowl.
- Pour sugar/Splenda over peaches and stir until you can no longer see the grains of sugar/Splenda.
- Pour peaches into batter and stir until evenly distributed.
- Pour mixture into mini-muffin tin. Fill each cup up without letting it overflow.
- Bake for 35 minutes or until gold brown.
- Allow to sit for about 10 minutes before serving.
