I love these Chocolate Chip Pumpkin Bars. Now I will preface this by saying I don't love Pumpkin Pie, so I have found it's the Pumpkin Pie spice that is the whole reason why. Consequently, I just leave that spice out when making stuff that asks for it. I never realized how adding pumpkin makes cake so moist. Try these next time your in the mood for a sweet treat and have your house smelling amazing while doing so.

  • 2 cups all-purpose flour
  • 1 tbs. pumpkin-pie spice (I leave this out, because I'm not a fan.)
  • 1 tsp. baking soda
  • ¾ tsp. salt
  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 1 cup canned pumpkin puree
  • 2 cups semisweet chocolate chips
  1. Preheat your oven to 350°. Spray a 9x13 pan and set to the side.
  2. In a bowl, whisk first four ingredients together (flour, baking soda, salt, and pumpkin-pie spice, if so desired).
  3. Using a mixer, cream the butter and sugar on medium-high speed until it's smooth.
  4. Then beat together the egg and vanilla. Add in pumpkin puree. Put the speed on low and mix your dry ingredients in carefully.
  5. Fold in chocolate chips.
  6. Spread the batter in the pan and bake for about 30 minutes. Cool and then cut into bars.
