Cook chicken, onions, and bell pepper until chicken is cooked all the way through and onions/peppers are caramelized.
Take chicken out of the pan and either shredded with a fork or be lazy like me and put chicken in food processor. Pulse 1-2 times being sure not to shred the chicken too much. Sprinkle in taco seasoning and 2 tbs. of water. Stir.
Place tortilla on panini maker or in a clean butter skillet. Cover tortilla with chicken mixture and then cheese. Place another tortilla on top of that. If you're using a panini maker, close the lid and cook for 1-2 minutes depending on brown you want it. If you're using a skillet, cook for 1-2 minutes on each side. Press down with spatula as it cooks.
Cut into 4 piece and service with salsa and sour cream.
