Praline Cookies

- ½ cup softened butter
- 1 cup firmly packed brown sugar (I used dark)
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup chopped pecans
- 1½ cup all-purpose flour
- 1 cup semi-sweet chocolate chips (optional - I didn't use for the first go around.)
- Preheat oven to 350.
- Beat butter and sugar on medium speed with hand mixer until creamy. Add in eggs and vanilla and beat til blended.
- Add in flour slowly and beat till blended. Fold in pecans.
- Drop dough by tablespoonfuls onto wax paper on top of baking sheets. Cool for 1 minute and then place cookies on cooling racks.
