Southwest Casserole

Those of you who know me well, know I’m a big fan of Mexican food. This Southwest Casserole is a great spin on some of my favorite Tex-Mex recipes. Beef, black beans, corn, and tortilla chips…Yep, that’s all I needed to hear. This is another great recipes that can be made ahead of time or if not, it can easily be whipped up in less than an hour.

Servings: 6
Prep Time: 15 minutes
Cooking Time: 25 minutes

Ingredients:
2 lbs. ground beef
1 chopped onion
1 can spicy chili beans
1 can black beans
16 oz. corn (drained)
15 oz. can tomato sauce
1/3 cup of taco seasoning
3 cups of shredded Mexican blend cheese
3 cups of crushed tortilla chips

Directions:
1. Preheat oven to 350°. Spray 9×13 baking dish with non-stick spray.
2. Brown beef and onion in large skillet on medium heat. Drain grease and add beans, corn, tomato sauce, and taco seasoning. Stir. Simmer on medium heat for about 10 minutes.
3. Pour half of beef mixture into baking dish. Top with 1 1/2 cups of cheese and crushed chips. Top with the rest of beef mixture. Finish off with the rest of the cheese and chips.
4. Bake for about 25 minutes.

    Ooh, this sounds fantastic and definitely something my husband and I would love to eat! We love anything that essentially takes taco ingredients and turns them into a new twist on a favorite food. Bookmarking for a future easy dinner. Great recipe! Thanks for posting! 🙂
