On of Rob’s favorite cookies are the Ranger Cookies. Coconut, oats, chocolate chips and the crunch from rice crispies make for a cookie that you canNOT just eat one of!

Servings: 30
Prep Time: 15 minutes
Cooking Time: 10 minutes

Ingredients:
1 cup butter
1 cup brown sugar, firmly packed, light or dark
1 cup granulated sugar
1 tsp. vanilla
1 tsp. salt
2 large eggs
2 cups all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1 cup old-fashioned rolled oats
1 cup shredded coconut
1 cup chocolate chips
3 cups crispy rice cereal

Ever heard of Ranger Cookies? These cookies have a little bit of everything. Coconut, Chocolate, and Rice Crispies make for a to die for cookie!

Directions:
1. Preheat oven to 350°.
2. Mix together the butter, sugars, vanilla, and salt until it mixed thoroughly. Add in eggs and mix.
3. In another bowl, stir flour, baking powder, and baking soda. Than, add in flour mixture into wet mixture and blend.
4. Mix in coconut, rice crispies, chocolate chips, and oats.
5. Roll out golf ball size mounds and then flatten down with your palm on a lightly greased cookie sheet. Bake for 10 minutes or until gold brown.
