Oatmeal Carmelitas

These Oatmeal Carmelitas are a quick go-to-dessert. This one of my newest favorite desserts because they are so delicious and great for all occasions.

Servings: 24 bars
Prep Time: 15 minutes
Cooking Time: 30 minutes

Ingredients:
2 cups all-purpose flour
2 cups uncooked quick-cooking oats
1 1/2 cups firmly packed light brown sugar
1 tsp. baking soda
1/4 tsp. salt
1 cup butter, melted
1 package (12-oz.) semisweet chocolate morsels
1/2 cup chopped pecans or walnuts, toasted (optional)
1 (14-oz.) package caramels
1/3 cup half-and-half

Directions:
1. Stir together first 5 ingredients in a large mixing bowl. Add butter, stirring until mixture is crumbly. Reserve about 2 1/2 cups of mixture. Press the remaining mixture into bottom of a lightly greased 13×9 inch pan. Sprinkle with chocolate morsels and pecans or walnuts (if you wish).
2. Microwave caramels with half-and-half in a microwave-safe bowl on medium (50% power) for 3 minutes. If caramels aren’t melted completely, stir and cook for another minute. Let stand 1 minute. Pour evenly over chocolate morsels. Sprinkle evenly with reserved crumb mixture.
3. Bake at 350° for 30 minutes or until light golden brown. If the top starts getting too brown, place a piece of foil lightly over pan.
4. Cool in pan on a wire rack. Cut into bars.
