Margarita Chicken

This Margarita Chicken Recipe is just so easy and full of flavor. Great for those busy week nights.

Margarita Chicken on a bed of rice pilaf makes for an easy dinner any time of the year.

Servings: 4
Prep Time: 1 hour (marinating time)
Cooking Time: 20-30 minutes

Ingredients:
4 bone-in chicken breast halves
1 can (10 oz.) thawed frozen margarita mix
2/3 cup tequila
1/2 cup fresh chopped cilantro leaves,
2 tablespoons chicken seasoning

Directions:

In a small bowl, mix together all ingredients except chicken. Put the chicken and marinade in a large ziplock bag. Let marinate in the refrigerator for a couple hours.

Directions for Outdoor cooking:
1. Remove the chicken and allow it to sit and come to room temperature while you prepare the coals.
2. Set up the grill for direct cooking over medium heat. Clean and grease the grate.
3. Put the chicken on grill and cook 5 to 6 minutes per side or until they’re cooked all the way though.

Directions for Indoor cooking:
1. Preheat oven to 350°.
2. Cook chicken on broiler pan for 20-30 minutes.

I serve this on a bed of rice with chopped tomatoes with green chilies on top.
