Lasagna

Lasagna has been one of those dishes that I have struggled with and finally quit trying. Drew gave me a cookbook for Christmas called Gooseberry Patch 5 Ingredient Family Favorites and it has the recipe in there, so I decided to give it a try again. I did have to improvise, because I didn’t have any pasta sauce on hand. I am so glad I decided to give Lasagna! It turned out amazing. I’m not sure what my hang up was before, but whatever it was it seems this recipe resolved it.

I’m curious to know what dishes you avoid because you just can’t seem to get it right?
Easy-Peasy Lasagna

Servings: 6-8
Prep Time: 20 minutes
Cooking Time: 45 minutes

Ingredients:
10 oz. pkg. lasagna noodles, uncooked
1/2 lb. ground beef
1/2 lb. ground Italian pork sausage
1 onion, diced
1 clove garlic, minced
14.5 oz. can Italian-seasoned petite tomatoes
14.5 oz. can tomato sauce
1 small can tomato paste (6 oz.)
2 tbs. Italian seasoning
3 cup ricotta cheese
1/2 cup grated Parmesan cheese
4 cups of shredded Mozzarella
2 eggs, beaten
2 tbs. dried parsley
salt and pepper to taste

Directions:
1. Preheat oven to 350°.
2. Cook noodles according to package directions and drain.
3. While those are cooking, brown the beef and sausage and onion in a medium-sized skillet.
4. Drain grease and add garlic, tomato sauce, tomatoes, tomato paste, and Italian seasoning.
5. Allow to simmer for about 10 minutes.
6. Mix together, ricotta, Parmesan cheeses, and eggs.
7. Spray a 13×9 baking dish with non-stick cooking spray. Place noodles across the bottom of the dish.
8. Add in 1/2 cup of beef mixture evenly over noodles.
9. Add in 1/2 of the cheese mixture and then Mozzarella.
10. Repeat and end with Mozzarella on top.
11. Cover with aluminum foil and bake at 350° for 45 minutes to an hour.
12. Let stand for 10 minutes before serving.

    I absolutely love lasagna, but have always avoided making it because I am afraid it won’t be seasoned correctly or it will be under done. I really like your recipe & look forward to trying this one out soon. Thanks so much!
